🌸 Makhana Kheer Recipe (Fasting Special)
Prep Time: 10 mins
Cook Time: 20–25 mins
Serves: 2–3
📝 Ingredients:
-
1 cup makhana (fox nuts/lotus seeds)
-
2½ cups milk (full cream preferred)
-
1–2 tsp ghee
-
2–3 tbsp sugar (or jaggery powder for a healthier version)
-
4–5 cashews, chopped
-
4–5 almonds, chopped
-
2 cardamom pods, crushed (or ¼ tsp cardamom powder)
-
A few saffron strands (optional)
-
1 tbsp raisins (optional)
-
1 tsp chironji seeds (optional)
👩🍳 Instructions:
-
Roast Makhana
Heat 1 tsp ghee in a pan. Add makhana and roast on low flame for 5–6 minutes until crisp. Set aside to cool, then roughly crush half of them (leave some whole for texture). -
Boil the Milk
In a thick-bottomed pan, boil the milk and let it simmer for 5–7 minutes until slightly reduced. -
Add Makhana
Add the crushed and whole makhana to the milk. Stir and cook for 10–12 minutes on low flame, stirring occasionally so it doesn’t stick. -
Flavor It
Add sugar, cardamom, saffron, and chopped nuts. Let it simmer for another 5 minutes until the kheer thickens. -
Finish Off
Turn off the heat. Add raisins and a little more ghee if desired. Let it rest for a few minutes before serving.
