Tips To Make Traditional Maharashtrian Thalipeeth At Home

 Thalipeeth is a traditional Maharashtrian multigrain flatbread, packed with flavors and nutrition. It is made using Bhajani, a special flour mix of roasted grains and lentils. Here are some tips and a step-by-step guide to making soft and crispy Thalipeeth at home.


Ingredients for Thalipeeth

For Bhajani (Flour Mix):

  • 1 cup jowar (sorghum) flour
  • ½ cup bajra (pearl millet) flour
  • ½ cup wheat flour
  • ¼ cup besan (gram flour)
  • 2 tbsp rice flour (for crispiness)

For the Dough:

  • 1 finely chopped onion
  • 2 tbsp chopped coriander
  • 1 tsp cumin seeds
  • 1 tsp sesame seeds
  • ½ tsp turmeric powder
  • ½ tsp red chili powder
  • ½ tsp coriander powder
  • ½ tsp salt (adjust to taste)
  • 1 tbsp curd (optional, for softness)
  • Water (as needed)
  • 1 tsp ghee or oil

Step-by-Step Instructions

1. Prepare the Bhajani Flour (Skip if using store-bought)

  • Dry roast jowar, bajra, wheat, rice, and besan separately on a low flame.
  • Cool them and grind into a fine flour. Store in an airtight container.

2. Make the Dough

  • In a large mixing bowl, take 1 cup of Bhajani flour (or a mix of the flours mentioned).
  • Add chopped onions, coriander, sesame seeds, cumin, turmeric, chili powder, and salt.
  • Add a little curd for softness (optional).
  • Gradually add water and knead into a soft, non-sticky dough.
  • Cover and let it rest for 10 minutes.

3. Shape the Thalipeeth

  • Take a parchment paper or banana leaf, grease it with oil.
  • Place a small ball of dough and pat it with fingers to flatten it into a thin disc (about 5-6 inches).
  • Make small holes in the center to help in even cooking.

4. Cook the Thalipeeth

  • Heat a tawa (griddle) and grease it with oil or ghee.
  • Transfer the thalipeeth onto the tawa and cook on medium flame.
  • Drizzle oil into the holes and around the edges.
  • Cook until golden brown and crisp on both sides.

5. Serve Hot

  • Serve with curd, white butter, green chutney, or thecha (spicy garlic chili chutney).

Tips for Soft & Crispy Thalipeeth

Roast the flours well to enhance the nutty flavor.
Add hot water while kneading for a softer texture.
Use banana leaves or wet hands to spread the dough easily.
Make small holes in the dough to ensure even cooking.
Cook on medium heat and drizzle ghee for a crispy yet soft texture.
